Simple Meatball Recipe
Meatballs are very easy to make! I have followed this Simple Meatball recipe for years with great success. Also meatballs freeze very well so make extra for the freezer. This is a base recipe so feel free to add your personal touch. Like additional spices and herbs or use turkey in place of pork or ground beef.
Spaghetti with Meat Balls (Spaghetti con Polpette)
Lightly mix the following ingredients:
½ lb ground beef
½ lb ground hot Italian sausage
1 cup bread cut in cubes, or ½ cup Italian bread crumbs
1 tablespoon grated Parmesan cheese
1 table spoon chopped fresh parsley
1 egg well beaten
1 teaspoon sea salt
¼ teaspoon pepper
With your hands mix the beef, sausage, cheese, salt and pepper. Add the beaten egg and mix incorporating the egg with the meat mixture add the bread and continue mixing. Roll the mixture into balls (you decide the size mine are about 1 ½ ounces).
Heat olive oil in a skillet and add a couple cloves of garlic quartered this will flavor the oil remove the garlic before it burns. Add some meatballs allow room to roll them around to brown on all sides. When browned I place them in a pot of sauce (gravy if your Italian) to finish cooking and to flavor the sauce. You can also finish cooking in the oven and freeze for later.
Sometimes for special occasions we use ground veal in place of the ground beef. Cooking especially Italian cooking is all about using the best ingredients you can find and cooking from the heart. Take your time enjoy a glass of wine, play Italian music and enjoy the experience.
